Top Award For ‘Clash Farm’s’ Charcuterie – Port Logan

Clash Farm’s Charcuterie scoops Best Product Award at Scotland’s Speciality Food Show

 

Artisan charcuterie from Clash Farm near Port Logan in Dumfries and Galloway been named ‘Best Product’ in the chilled and frozen category of Scotland’s Speciality Food Show – the biggest speciality and fine food trade event in Scotland.

The annual awards seek to highlight the Scottish products that are most highly rated by industry buyers and food experts.  Show organisers said the judges were ‘unanimously delighted’ with Clash Farm’s salami and loved the taste.

 

Clash Farm specialise in producing pork, bacon and artisan salami products from their pedigree saddleback pigs.  The pigs are free range and are grown for twice as long as a commercial pig to imbue the salami with a rich, rustic flavour.

 

Caron Kennedy-Stewart of Clash Farm said she was surprised but thrilled to have won the ‘Best Product’ award at the Show.  She said:

“This is only the second year we have attended Scotland’s Speciality Food Show and we were blown away by the response to our products this year, in fact we sold out of stock almost immediately and are now busy making more.

 

“It takes around 6 weeks to produce our small batch salami, with each batch made by hand and hung in carefully controlled conditions that create the perfect atmosphere for the salami to age.  It’s a long process but the flavour is absolutely worth the wait.”

 

Lorna Young of regional food and drink organisation DG Food & Drink commented that the award was richly deserved:

“Clash Farm has been perfecting their charcuterie over the last few years and have created a product of outstanding quality with strong provenance, so I’m delighted that the judges have recognised this by awarding them the Best Product title.  It’s products like this Scottish salami that make Dumfries & Galloway’s larder such a varied and rewarding experience – small batch, artisan produce carefully crafted by people who are truly passionate about the quality of their work.  Clash Farm’s salami is a wonderful example of D&G food at its very best.”

 

Creating a Scottish salami has been a natural step for Caron and husband Robert, with Caron’s Italian heritage influencing their approach and flavour profiles.  Caron added:

“My father came over to Scotland from a small village near Monte Cassino when he was 17 having grown up on a family smallholding, so Italian approaches to food and small scale artisan production have always been part of family life.  Our saddleback pork is very well suited to this type of product and we are thrilled with the response so far.”
